So while I’m working on a few bigger posts I figured I can’t just leave you guys out in the dark until they’re done!
I thought I’d just share what I’ve been up to lately in my kitchen! Well, minus the BIG food holiday we just had, it has been a soup odyssey around here for the last couple of weeks!
It’s gotta be the weather, because I’ll I’ve wanted is hot, brothy soup. Not only are soups a great way to clean out the fridge of those random veggies you just don’t know what to with, or that odd handful of beans or rice, but most of them tend to be fairly healthful, as well as low in calories. And if you’re a giant nerd like me, you make all of them in your pressure cooker, so yup, it’s also a wicked fast meal! (The longest time was wild rice soup at 25 mins!) A few of the stand outs were:
And honorable mention goes out to Cheezy Wild Rice with Soy Curls, Smokey Split Pea, Tortilla Chip Soup, and Italian Minestrone. You were all wonderful! But tonight I’m thinking a nice Indian Sambar, heavy on the cumin and coriander.
And since I normally have a huge salad in the afternoon for my lunch, I tend to skip the greens as a side with my soup. But a nice hunk of bread is always a good idea! So I’ve also been busy making sure these little beauties are around too:
But more recently, (since our thanksgiving pie went away) I’ve been having some pretty strong sweet cravings. Can I just say, thank goodness for Chocolate-Covered Katie! Not only are the majority of her recipes vegan AND gluten free, they also tend to lean to the healthier side of things.
But my biggest love of this site is the single serving recipes! I’m one of those people that just can’t have a lot of sweets sitting around, (cause somehow they go away, and fast!) so this is PERFECT!
Peanut Butter Cookies for 1

These happened the other night…2 lovely peanut butter cookies…
Also this week there was a container of soy yogurt that needed to go away, so that became a chocolate frozen yogurt…oddly enough I don’t have any pictures of that. (mostly because it only was around for 20 hours)
And tonight, owing to the fact that I now have an entire ice cube tray full of lemon juice (from my holiday Limoncello making!) we’re making GF Lemon cookies!!
I will do my best to leave them in the freezer, and exercise my will power. Wish me luck!
